Soda Bread

 

Ingredients

  • 250g wholemeal flour
  • 250g plain flour, plus extra
  • 1 tsp baking soda
  • 1 tsp salt
  • 25g butter
  • 100g oats, plus extra
  • 450ml buttermilk, room temp
  • 1 egg

 

Method

Preheat oven to 200°C / 180°C fan assisted and flour a large baking tray.

In a large bowl, whisk together first 4 ingredients. Add the butter and use your fingertips to rub into the dry ingredients. Add the oats and toss to combine.

Add the buttermilk and egg and stir with a wooden spoon just until combined. Turn dough out onto a floured surface and lightly knead with floured hands to form a round loaf. Transfer to the floured baking tray and score the top with a cross using a large sharp bread knife or similar.

Sprinkle with a handful of dried oats, then bake in the preheated oven for 30-35 minutes. Check to see if the loaf is baked by tapping the bottom of the loaf, if it sounds hollow when tapped, it’s ready.

Leave to cool on a wire rack.
